What vapa pitha actually is
Vapa pitha (ভাপা পিঠা), also written bhapa pitha, is a steamed rice cake — ground rice packed loosely into a small bowl around a filling, then steamed over cloth until it sets into something soft and barely holding together. Traditionally the filling is coconut and date molasses (khejur gur), and the pitha is eaten hot, in the hand, on a cold morning.
In Bangladesh pitha is winter. It appears on streets and in homes when the weather turns and the new rice and fresh gur arrive, and it disappears again by spring. It is the most seasonal thing on our menu, and the one people are most homesick for.
How we make it
Vapa pitha cannot be made ahead. It is steamed, and it is eaten hot — a pitha that has sat and cooled is a different, sadder thing. We steam ours for the date you give us.

Is vapa pitha available all year?
No. It is a winter seasonal, the way it is back home. Message us to ask what we're steaming right now.
Why is it sold in fours and sixes?
Because it is steamed in individual moulds, not cut from a tray. Four pieces is $12.50 and six is $18.
Should I order it for the day of my event?
Yes. Vapa pitha is meant to be eaten hot and fresh — give us the date you actually want to serve it.
