What rasgulla actually is
Rasgulla (রসগোল্লা) is made from chhana — fresh milk curd — kneaded smooth, rolled into balls and simmered in light sugar syrup until they swell and turn spongy. A good rasgulla is white, springy, and releases syrup when you press it; a heavy or grainy one means the chhana was rushed.
It is probably the best known Bengali sweet in the world, and the one most people picture when they hear mishti. It is eaten at room temperature or chilled, usually two or three at a time.
How we make it
We make ours in small batches after the order comes in, so they are not sitting in syrup for days losing their spring. Everything is halal, with no preservatives.
Because each batch is made to order, we ask for two days' notice.
When people order it
Rasgulla is the default for Eid, Puja, birthdays, engagements and mishti mukh — the sweetening of the mouth after good news. It is also the sweet people order in the largest counts, because it suits everyone.

Do they come in syrup?
Yes — rasgulla is served and delivered in its light syrup, which is what keeps it soft.
